Happy Easter Hivers, today I propose to you an old recipe that sometimes I happen to cook when I have more time, like today, the "Bollito" or "Lesso" which translated means boiled and boiled due to the way in which the meat is prepared, this dish it is a mixture of vegetables and meat, a traditional poor dish with various variations different from region to region, here in my city we prepare it as I will explain later, it is a perfect dish for the winter, warm, enveloping and nutritious!

For this recipe we need:

  • 450 grams of adult bovine pulse. (A fairly lean and waste meat suitable for this type of recipe)
  • Three stalks of celery
  • Three potatoes
  • Three carrots
  • An onion
  • Two cloves of garlic
  • Three sprigs of parsley
  • Three tablespoons of oil
  • 500ml beef broth

It is a recipe that requires very long cooking, so arm yourself with patience!

  • Tres zanahorias
  • Una cebolla
  • Dos dientes de ajo
  • Tres ramitas de perejil
  • Tres cucharadas de aceite
  • 500ml de caldo de ternera

Es una receta que requiere una cocción muy larga, por lo que ¡Ármate de paciencia!

Then let's deal with the onion, peel it and cut it into large pieces, not small ones, the boiled meat has all vegetables in large pieces, now let's move on to the potatoes, peel them and cut those into large pieces too. As soon as the water boils, throw in the celery and parsley and boil for ten minutes, then add the carrots, potatoes and onion and obviously the meat. Let everything boil over medium heat for three hours, as I said for these cuts of meat and type of recipe, cooking is very long and obviously we have to stir often.

When the three hours have passed, we peel the garlic which we will then add to the dish, drain the vegetables and meat well and serve them with the spoons of oil to flavor everything.

A long dish to make but really good, the meat after three hours is really soft and tasty and the vegetables are also very soft and match the flavor of the meat perfectly, a truly delicious dish, perfect on the table especially for the holidays!

Y aquí está el procedimiento, primero preparamos una olla con el caldo a hervir a fuego lento, cogemos la carne y la lavamos bajo el agua.

Luego cogemos los tallos de apio y los lavamos, los reservamos y pelamos las zanahorias, sin cortarlas, solo nos queda pelarlas.

Luego nos ocupamos de la cebolla, la pelamos y la cortamos en trozos grandes, no pequeños, la carne hervida tiene todas las verduras en trozos grandes, ahora pasemos a las patatas, las pelamos y las cortamos en trozos grandes también.

En cuanto el agua hierva, echa el apio y el perejil y deja hervir durante diez minutos, luego agrega las zanahorias, las patatas y la cebolla y obviamente la carne. Dejamos hervir todo a fuego medio durante tres horas, como dije para estos cortes de carne y tipo de receta la cocción es muy larga y obviamente hay que revolver seguido.

Cuando hayan pasado las tres horas pelamos los ajos que luego añadiremos al plato, escurrimos bien las verduras y la carne y las servimos con las cucharadas de aceite para darle sabor a todo.

Un plato largo de hacer pero realmente bueno, la carne después de tres horas está muy suave y sabrosa y las verduras también son muy suaves y combinan perfectamente con el sabor de la carne, un plato realmente delicioso, perfecto en la mesa ¡especialmente para las fiestas!
