Hoy quiero compartir con ustedes una receta muy especial que preparé para esta Navidad. No soy muy experta en la cocina, pero con la ayuda de @crisvictorero me atreví a hacer un bizcocho de coco, muy rico y sencillo. Les voy a contar cómo lo hice paso a paso.

Good morning everyone!
Today I want to share with you a very special recipe that I prepared for this Christmas. I am not very expert in cooking, but with the help of @crisvictorero I dared to make a coconut cake, very delicious and simple. I'm going to tell you how I did it step by step.


Receta bizcocho de coco.
Ingredientes:
3 huevos.
3/4 de taza de azúcar.
1 taza de coco rallado.
1 taza de harina.
1 cucharadita de sal.
2 cucharaditas de polvo de hornear o bicarbonato.
Pizca de canela.
Aproximadamente 100 gramos de mantequilla o margarina (yo usé margarina).

Coconut cake recipe.
Ingredients:
3 eggs.
3/4 cup of sugar.
1 cup of grated coconut.
1 cup of flour.
1 teaspoon salt.
2 teaspoons of baking powder or baking soda.
Pinch of cinnamon.
Approximately 100 grams of butter or margarine (I used margarine).



Preparación:
Antes de empezar, hay que tener el lugar bien limpio y lavarse las manos correctamente.
Los huevos deben estar a temperatura ambiente.
Separamos las claras de las yemas y las reservamos. Es importante separar la yema de cada huevo por separado, para evitar si uno de los huevos está contaminado, se mezcle con los demás y arruine la receta.
Batimos las claras hasta que estén a punto de nieve, y luego vamos añadiendo el azúcar poco a poco, sin dejar de batir, hasta formar un merengue firme y brillante.
Añadimos las yemas y batimos un poco más, hasta integrarlas bien con el merengue.

Preparation:
Before starting, you must have the place very clean and wash your hands properly.
The eggs should be at room temperature.
We separate the whites from the yolks and reserve them. It is important to separate the yolk from each egg separately, to avoid if one of the eggs is contaminated, it mixes with the others and ruins the recipe.
We beat the egg whites until they are stiff, and then we add the sugar little by little, without stopping beating, until forming a firm and shiny meringue.
Add the yolks and beat a little more, until they are well integrated with the meringue.



Derretimos la mantequilla o margarina en el microondas o a fuego bajo, cuidando de no quemarla, y la agregamos a la mezcla anterior batiendo suavemente.

We melt the butter or margarine in the microwave or over low heat, taking care not to burn it, and add it to the previous mixture, beating gently.



Tamizamos la harina, la sal, el polvo de hornear o bicarbonato y la canela, y los incorporamos a la masa, mezclando con una batidora de mano, con movimientos en un sólo sentido, hasta obtener una consistencia homogénea y sin grumos.
Un truco para que el coco rallado no se vaya al fondo del bizcocho es mezclarlo con un poco de harina antes de añadirlo a la masa. Así se distribuirá mejor por toda la preparación y le dará un sabor y una textura deliciosa.
Sí la masa queda muy espesa, podemos aligerarla con un poco de yogur natural o leche, hasta que tenga la consistencia adecuada para verterla en el molde.

Sift the flour, salt, baking powder or baking soda and cinnamon, and add them to the dough, mixing with a hand mixer, with movements in one direction, until obtaining a homogeneous consistency without lumps.
A trick so that the grated coconut does not go to the bottom of the cake is to mix it with a little flour before adding it to the dough. This way it will be better distributed throughout the preparation and will give it a delicious flavor and texture.
If the dough is very thick, we can thin it with a little natural yogurt or milk, until it has the right consistency to pour it into the mold.



Precalentamos al horno a 180°C y engrasamos un molde con un poco de margarina o aceite. Vertemos la masa en el molde y alisamos la superficie con una espátula.
Horneamos el bizcocho durante 45 minutos, o hasta que al insertar un palillo en el centro, salga limpio y seco. Es importante no abrir el horno muchas veces durante la cocción, para evitar que el bizcocho se queme por los cambios de temperatura.

Preheat the oven to 180°C and grease a mold with a little margarine or oil. Pour the dough into the mold and smooth the surface with a spatula.
Bake the cake for 45 minutes, or until a toothpick inserted into the center comes out clean and dry. It is important not to open the oven too many times during cooking, to prevent the cake from burning due to changes in temperature.



Sacamos el bizcocho del horno y lo dejamos enfriar sobre una rejilla. Lo desmoldamos con cuidado y lo decoramos a nuestro nuestro gusto. Podemos espolvorearlo con más coco rallado, azúcar glass, chocolate derretido, frutas, etc. En este caso yo lo espolvoreé con galletas "María" trituradas.
En el caso de la preparación que se hizo, el molde que teníamos era mucho más grande con respecto a la cantidad de ingredientes que se usaron, por eso no pudo crecer mucho. Les recomiendo si tienen la materia prima suficiente e igual un molde amplio, que usen el doble de ingredientes.

We take the cake out of the oven and let it cool on a rack. We unmold it carefully and decorate it to our liking. We can sprinkle it with more grated coconut, powdered sugar, melted chocolate, fruits, etc. In this case I sprinkled it with crushed "Maria" cookies.
In the case of the preparation that was made, the mold we had was much larger with respect to the amount of ingredients that were used, that is why it could not grow much. I recommend that if you have enough raw materials and a large mold, you use twice as many ingredients.
