
Hi, foodies! I’m so happy to have made this cake my husband’s favorite. When he found out I’d chosen his favorite coffee to make this cake, He was immediately excited—yeah, instant coffee without grounds from Luwak coffee. This coffee is a local product with a large following. It’s a blend of natural black coffee without grounds that dissolves in water; according to my husband, this is the best coffee. This coffee actually already contains added sugar, so if you don’t like your cake too sweet, you can reduce the sugar during the baking process.

This coffee cake is actually just like any other cake; the use of ingredients and flavor combination rely on the coffee powder. The final result and color will be delightful with the subtle flavor of this treat. Curious about the preparation steps? Let’s take a look below.
Ingredients

100 ml warm water
4 eggs
180 grams granulated sugar
1 teaspoon baking powder
200 grams all-purpose flour
100 grams melted margarine
Instructions
Dissolve the coffee in 100 ml of warm water until it is completely dissolved, then set it aside.




Crack 4 eggs, add baking powder and granulated sugar, then beat with a mixer until thick, white, and leaving trails.




Add the all-purpose flour and beat again until well combined; don’t forget to sift the flour first.


Next, add the coffee mixture—make sure it’s cool before adding. Stir until well combined, then add the melted margarine.




After stirring, pour the batter into a baking pan greased with margarine, then bake in the oven for about 50 minutes using top and bottom heat at 180 degrees Celsius, or adjust according to your oven.




Result

Serve the cake sliced on a serving plate; you’ll know it’s done when the aroma fills the entire room. The coffee scent and the distinctive character of this cake are undeniable—everything is simply perfect. I absolutely love the combination of aroma and texture; it’s undeniably perfect for serving my sponge cake.
