Soft red date cake

Materials needed

Low gluten flour for Arowana Pastry 280g, Red dates (with seeds) 100g, 80g brown sugar, 140g water, corn oil 140g, 7 eggs (total weight after removing the shells is about 360g), 2 grams salt, Baking powder 6g, 40 grams of white sugar

Pour the dough into the molds, a full 7-8 minutes, remove the mold twice, beat out large bubbles, put in the preheated oven at 175° and bake for about 35 minutes.

After baking, insert a toothpick into the middle of the cake, if the toothpick that has been removed has no residue, it means it is cooked. The cakes can be removed from the mold when they are not hot in your hands and placed on a cooling rack to continue cooling.

Tips

  1. Beating all the eggs is an important step. Hand kneading may take some time. If you have a cooking machine, it is best to beat the egg cage at high speed to shorten the whisking time. 2. When turning the dough, mix well and quickly so that the flour and egg liquid are well mixed and well blended. The technique must be sharp and sharp, not slow, if not stirred for a long time will cause the egg liquid to foam, and the resulting jujube cake will not be soft. 3. It is convenient to use the homogenizing rod to mix jujube juice and corn oil. If not, you will need to stir it patiently with a whisk to combine it. There are skills in cooking delicious dishes.
