Cook with Patsitivity #3 : Crepes and Fresh Lumpia from scratch

I'm cooking Batchoy at the moment and while waiting for the broth to perfectly come out from the pork bones and meat (the recipe I'm following says it will take 4 hrs 🤨). So I'm using the waiting time to share with you not just one but two complementarty recipes.

A few weeks back, I decided to make fresh lumpia from scratch including its wrapper. That's how I ended up making crepes, too! This food blog will be divided into two: (1) Crepe Recipe and (2) Fresh Lumpia Recipe.

CREPE RECIPE

Ingredients:

  • 1 cup or 125g all-purpose flour
  • 1/2 tsp salt
  • 2 eggs
  • 1 1/4 cup or 300 ml milk
  • 2 tbsp or 30g butter

Cooking Procedure

  1. In a mixing bowl (preferably a medium-sized one), sieve in the flour and salt.
  2. Melt the butter in a pan or if you have a microwave, you may use it, too.
  3. In a separate mixing bowl, combine and whisk until combined all the eggs and the milk
  4. Pour a little portion of the egg and milk mixture into the bowl with dry ingredients. Whisk slowly until combined without lumps. It's important to make sure that there are no lumps and it's as smooth as it could be before cooking it.
  5. Repeat #4 until all the dry ingredients have been added to the wet mixture. Add the melted butter. Whisk just until combined. Do not overmix.
    Note: In the recipe I used, there's a suggestion that the crepe batter will be stored in the fridge for at least 30 minutes but in my case, I skipped this step. If you have time, you may follow this step before cooking the crepe. Otherwise, you may proceed with #6.
  6. Heat a frypan or if you have a crepe pan, it should be easier to cook the crepe there. Don't forget to grease the pan with oil or butter but preferably butter.
  7. Pour crepe batter into the pan and tilt the pan to spread the crepe batter evenly. Cook the crepes over medium heat only for about a minute or until you could see the batter looks cooked. Do the same procedure until all batter has been cooked.
  8. Let the cooked crepe cool down before you start filling them with your filling of choice. In this recipe, I simply sliced a few ripe bananas for the crepe's filling and drizzle Hershey's chocolate on the surface of the rolled crepes. I used the rest for my fresh lumpia.

This is how my crepes looked like. They were smooth but I find them very thick compared to other crepes. I used a regular pan so I had difficulty spreading the batter to create thinner ones. Nonetheless, they're great!

FRESH LUMPIA RECIPE

For the fresh lumpia recipe, I got it from Chef RV's Youtube Channel. Here it goes!

Ingredients for the sauce:

  • 2 tablespoon soy sauce
  • 1 1/2 cup water
  • 1/2 cup brown sugar
  • 2 tbps cornstarch
  • 2 tbps peanut butter
  • 2 tbps minced garlic
  • salt and pepper

Ingredients for the fresh lumpia

  • 1/4 cup sliced red onions
  • 2 tbps minced garlic
  • 2 cups sliced singkamas
  • 2 cups sliced carrots
  • 2 cups sliced cabbage (optional)
  • 2 cups sliced mushrooms (optional)
  • 1-2 tbps fish sauce
  • finely chopped roasted peanuts
  • toasted minced garlic
  • crepes for the wrapper
  • oil or butter
  • lettuce (optional)

Cooking procedure:

1.For the fresh lumpia sauce, mix all the ingredients in the list above until smooth and lump-free. Then heat in low fire until you achieve a sticky yet still pourable consistency.

2.For the fresh lumpia, in a medium pan melt butter (you can also use oil) and saute onion and garlic. Add in all the vegetables you prepared into the pan. In my case, I only prepared singkamas and carrots. Mix until slightly cooked.

3.Add the fish sauce and mix all over again. In the recipe, the roasted peanuts was used as toppings only but when I made these, I added small portion, about 1 tbps of the crushed roasted peanut with the rest of the vegetables.

4.Do not overcook the vegetables, they should remain crunchy and fresh looking. Not wilted and overcooked. Let the vegetable cool down before assembling the fresh lumpia.

5.Now it's time to assemble! Get the crepe you prepared early on. Lay it on a plate big and start to add the cooked vegetable at the upper portion of the crepe. Yup, the vegetables will serve as the filling of the lunmpia. Roll the crepe creating a cylinder-like structure. Ensure that the filling are secured the entire process of rolling, In my recipe, I added lettuce leaf but this is optional.

6.Take the sauce you made a while ago and drizzle those on top of the fresh lumpia. Garnish with the roasted peanut. Add as many as you want! Serve and enjoy!

This is why medyo pricey ang Fresh Lumpia kay medyo kuti ang procedure, crepes pa lang daan kay mo hilak nako kay basin mag sigeg ka gisi. Anyways, I am saving this for future reference kay my mother loves fresh lumpia.
