Butternut squash pasta recipe ---VEGAN

This was My first attempt at cooking this and it came out great!

  • chop onions and garlic and chilli and fry it in a little olive oil
  • If you have white wine at home pour a little onto the caramelized onions
  • Peel Butternut Squash and cut into cubes
  • Dissolve a Stockcube in 500 ml boiling water
  • Add squash and vegetable stock and boil for 40 minutes or until soft enough to squash with a fork
  • Boil any pasta you want
  • depending on how dedicated you are when you mash the squash, the sauce should be more or less creamy now and needs a generous amount of nutritional yeast, a little paprika and a little sage.
    -Mix all the ingredient together and just before serving mix in a little watercress
