
Ingredients:
- 1 shallot or onion, minced
- 3 garlic cloves, minced
- 1 tbsp ginger, minced
- 1 red bell pepper, sliced in long strips
- 4 thai chilis, optional
- 2-3 tbsp red curry paste, depending on your taste
- 1 can of coconut milk, 13.5oz
- 2-3 cups of water (2 cups if you like creamy soup, 3 cups if you like more watery)
- 2 tbsp brown sugar, depending on your taste
- 1/2 tbsp chicken bouillon powder, , depending on your taste
- 1/2 tsp cayenne pepper
- 1 lime, squeezed
- 2 frozen udon noodle packs
- 1 green onion, sliced
- handful of cilantro, roughly chopped
- Your choice of protein, optional
**If you have no other ingredients, the 5 ingredients of curry paste, sugar, coconut milk, lime, and noodles will already make a divine dish!**
Instructions:
- Heat pan on medium heat and add oil to cover the pan.
- Add shallots (or onions), garlic, ginger and cook for 2 minutes.
- Add red bell peppers and thai chilis (if using).
- Add red curry paste and mix well. Add coconut milk and mix well. Add water.
- Add sugar, chicken bouillon powder, cayenne pepper, and lime.
- Turn heat to medium high. Add frozen udon noodles and cook for 3-4 minutes. If you're using udon that is not frozen, then cook for 1-2 minutes only. Make sure the udon is al dente and you don't overcook it.
- Put udon and soup in a bowl. Garnish with green onions and cilantro. Put your favorite protein on top. And enjoy!
Wow, that red curry udon surely is delicious. To be honest I haven't been able to eat this kind of dish. If I may ask, how does udon differentiate from ramen in terms of taste and texture?
