Afang soup( eaten by ibibio and Efik people of Nigeria)
Is a delicious delicacy made with afang leafs and a vegetable called waterleaf or spinach.
A little story about my food history, my mother is from a state called Akwa Ibom in Nigeria and it believe that they cook the best meal .
What is Afang leaf?
Afang leaf is also called Eru in Cameron and Okazi in other part of Nigeria. Is a flavorful green leaf grown in West Africa and use in making different soup. Afang is one of the most common leaf vegetable in Nigeria and is also found in Cameroon, Gabon, Congo and Angola.
Ingredients
4-6 cups Meat Stock (Add more water as needed)
½ cup Ground crayfish
½ Tbsp Cameroon pepper
1-½ to 2 cups palm o
300 g beef or roasted turkey pre-cooked
350 g cow feet pre-cooked
350 g stock fish pre-cooked
2 cups frozen cooked shrimps (optional
907 g frozen spinach
500 g ground okazi
2 teaspoons Bouillon powder (adjust to taste)
½ teaspoon salt (adjust to taste)
2 pieces of Dried fish cleaned and deboned. (optional)
Sequel to Preparation
Wash, drain, and slice the water leaves.
Grind or pound your sliced Okazi/Afang leaves. Most sellers in the market might have a grinding machine to help you grind it. Alternatively, you could grind it at home with your blender and a small quantity of water. Grinding the Afang leaves turns the leaves into a pulp which you can put into a plate, ready for food preparation.
Grind your pepper and crayfish and chop your onions too.
Wash your periwinkle with salt and water in a bowl to wash away any dirt or debris that might be on it. You can wash up to three or four times for best results.
Preparation of afang soup
Boil your well-seasoned assorted meat. When the meat is soft, add the dry fish into the pot of meat and boil for another 5 minutes.
Add your palm oil, followed by the ground crayfish, and pepper. Once the mixture starts to boil, add your ground Afang (okazi) leaves and sliced water leaves. If you wish to use periwinkle for the soup, this is the right moment to add it to the soup.
When the Afang leaves have softened, and you do not have much water in your pot anymore, add salt and seasoning to taste.
Allow to simmer for 5 minutes and Your Afang Soup is ready
