Pescado al ajillo horneado. │ Baked fish. [ESP-ENG]

El fin de semana pasado, me llamó mi madre para contarme la genial noticia de que había comprado uno de mis pescados favoritos; en mi ciudad este es conocido como “Catalana”. Me emocioné mucho y quedé pensando en ir a su casa para prepararlo como una de las formas que más me gusta por su gustoso sabor, entonces le dije que me esperara el domingo para ir a cocinar pescado al ajillo horneado.

Last weekend, my mother called me to tell me the great news that she had bought one of the favorite fish, in my city it is known as “Catalana”. I was very excited and I kept thinking about going to her house and preparing it as one of the ways that I like the most because of its tasty flavor. I told her to wait for me on Sunday to go cook baked fish.

Muy bien, lo primero que tenemos que hacer en conseguir el pescado. Cabe resaltar, que esta receta la podemos hacer con el pescado de nuestra preferencia, de igual manera quedará muy rica y nuestro paladar nos lo agradecerá. A mí en lo particular desde pequeña me encanta la Calatana porque se caracteriza por tener bastante carne a diferencia de otros peces.

Well, the first thing we have to do is get the fish. It should be noted that this recipe can be made with the fish of our choice, in the same way it will be delicious and our palate will thank us. Since I was little, I particularly love the Calatana because it is characterized by having a lot of meat unlike other fish.

Estos son los sencillos ingredientes que debemos utilizar para nuestra exquisita receta:

  • Pescado
  • Aceite
  • Ajo
  • Perejil
  • Pimienta
  • Sal

These are the simple ingredients that we must use for our exquisite recipe:

  • Fish
  • Oil
  • Garlic
  • Parsley
  • Pepper
  • Salt

El siguiente paso, consiste en sazonar el pescado con los todos los ingredientes previos, obviamente esto debe ser al gusto, no hay medidas como tal. Sin embargo, para hornear estos tres pescados yo utilicé una cabeza de ajo, no escatimen al utilizarlo porque es lo que realzará los sabores. De igual modo, agregué un puñado de perejil bien cortado. Con la sal y la pimienta pues esto si debe ser a juicio de la persona que está cocinando.

The next step is to season the fish with all the previous ingredients, obviously this must be to taste, there are no measures as such. However, to bake these three fish I used a head of garlic, do not skimp when using it because it will enhance the flavors. Similarly, I added a handful of well-cut parsley. With regard to salt and pepper, this should be at the discretion of the person who is cooking.

Por cierto, antes de meter la bandeja en el horno (puede ser cualquiera grande que tengan al alcance), deberán agregar media taza de aceite en esta para que los pescados se puedan sofreír y suelten todo sus jugos en el aceite. Preferiblemente se aconseja llevar la bandeja al horno para que se precaliente antes de agregar los pescados sazonados.

BTW, before putting the tray in the oven (it can be any large one that you have within reach), you should add half a cup of oil in it so that the fish can be fried and release all their juices in the oil. Preferably it is advisable to take the tray to the oven so that it is preheated before adding the seasoned fish.

Finalmente, dejamos que el pescado se cocine alrededor de unos 30 minutos, pero si les gusta más tostado pueden dejarlos dentro del horno alrededor de unos 40 minutos, siempre a una temperatura media. Es importante voltear el pescado para que ambos lados se cocinen muy bien.

Este fue mi resultado luego de la media hora, luce exquisito y su sabor fue delicioso. Como pudieron ver en la foto de portada, yo lo acompañé con arroz y ensalada cocida. Los comensales quedaron fascinados con mi receta, espero en algún momento puedan intentarla.

Finally, we let the fish cook for about 30 minutes, but if you like it more toasted, then you should leave them in the oven for about 40 minutes, always at a medium temperature. **It is important to turn the fish so that both sides cook very well.

This was my result after half an hour, it looks exquisite and its flavor was delicious; as you could see in the cover photo I accompanied it with rice and cooked salad. Diners were fascinated with my recipe; I hope at some point you can try it.
