When Pizza Won't Do: King Oyster Mushroom Gnocchi

My freak of a husband doesn't like pizza. If I had known that when I married him, I might have thought twice. Surely it's am indication of craaaazzzy? He'll tolerate it and enjoy it even if I am making it, but will he satisfy my desire to not cook and go to the pizza shop?? Noooo.

So the best thing I can think to not cook and have something quick, easy and delicious is to have king oyster mushroom gnocchi.

These babies have a kind of sausage like feel to them with the right flavouring. First you want to dry fry them, adding heaps of smoked paprika whilst they are browning, a little salt and pepper, and maybe a splash of liquid smoke to really get them meaty. Then a splash of olive oil and some spring onions and garlic cloves and continue to fry until they start to brown.

At this point, chuck a pack of gnocchi in boiling water. Then add a BIG knob of butter (I use vegan margarine) to the mushroom pan and let it melt in the mushrooms so it's saucy. Drain the gnocchi, toss around in the buttery mushroom sauce, and serve, adding a side salad or, in my I don't want to cook mode, a handful of lettuce. Sprinkle liberally with pepper, and parmesan cheese if you fancy.

Of course, it's the kinda meal that goes well with red wine.

Sadly, after two glasses, I woke up a bit headachey. I was okay, and drove up to Melbourne to see the grandson, but by the following day I was feeling terrible, with a stonking headache and just generally terrible. By Monday I was vomiting and my migraine was so bad I thought I was going to die.

I'm not SURE it was the wine, but it definitely can be a trigger. As I write this I'm just starting to feel better. Maybe next Friday night will be gnocchi and a glass of bubbly instead, and I'm talking soda water as the thought of any kind of fermented food or drink makes me feel ill write now.

But mushroom gnocchi? Ooh yeah. I'm in.

That reminds me of that I should make gnocchi more often, that looks delicious! Last year we 'discovered' oyster mushrooms as a perfect meat substitute. We season the mushrooms with shawarma seasoning and put them in pita bread with a fresh salad and home made garlic sauce. Super tasty! Just writing about it makes me want to eat it now, and it's 10:26AM😂

Oh yum that sounds amazing ... They do have that texture don't they and they'd be delish in a kebab like that... I must try them in tacos too!

I don't know a lot about histamine intolerance but it sounds like it could be from what you've shared.

It might be useful to look into it because if you know what it is then you can start dealing with the cause. (I THINK it's to do with the digestive system's ability to heal itself and it's overreacting to things it shouldn't react to).

I bought a book last year that MIGHT help. It's written by a gastro doctor who is an advocate for whole food plant-based eating (so lots of yummy, Riverflows-friendly recipes in there) and using food to heal the gut. He has a whole section in there on dealing with and aiming to resolve histamine intolerance.

I respect and admire his work and can recommend it wholeheartedly. His book is called "The Fibre Fueled Cookbook" (Dr Will Bulsiewicz)

I hope you're feeling better by now.. I feel for you as I can get terrible migraines without drinking any alcohol at all.. I feel the weather changing, nothing you can do about that, but luckily the pills I get from my doc can..

A beautiful gnocchi spoiled 😁 Gnocchi is one of my favorites. It used to be my "test" dish in Italian restuarants in San Francisco. First time there, can they make a good gnocchi?

Gnocchi is on my try list! will remember to add mushroom on mine. It seems like gnocchi is easier to make than tagliatelle 🤣

Sorry you ended up feeling so poorly and glad it is resolving quickly. Those mushrooms looked superb!

Delicious as they look, those are definitely porcini mushrooms! was my immediate reaction to your post. But then I looked into it, and learned that the two kinds may look (somewhat) similar, they're not even related! So thanks for the lesson, and for inspiring me to cooking some mushroom dish.

I'm sorry about your migraine! It didn't sound like it was the wine, though. Do you have this regularly? Does a hot bath or a sauna or something along those lines help? Hope you're feeling better.
