Tuna Mackerel in Coconut Milk (Ginataang Tulingan)

Hi food buddies here in hive!
Our family is fond of eating dishes cooked in coconut milk, may it be vegetables or fish. Tulingan "Tuna Mackerel" is on of the most, delicious fish to be cooked in coconut milk.

Here's what we need:

•500g Tuna Mackerel
•1/2 Cup Sukang Takal (if not available, use 1/3 cup regular vinegar then add water to fill 1/2 cup)
•2 Green Finger Chili
•Thumb size Ginger, Peel and slice
•1 Onion, slice
•2-3 Eggplants, cut to quarters
•1 Tablespoon Rock Salt
•1 teaspoon Pepper
•125ml Coconut Milk

Let's start cooking.

In a shallow pot, place all eggplants first then onion, ginger, finger chili, salt and pepper.

Now put tuna mackerel and pour vinegar. Simmer over medium heat until vinegar is almost gone.

Pour coconut milk and simmer over low-medium heat for 3-4 minutes. Cover with lid.

Ginataang tulingan with talong is now ready.
If this is our dish I always cooked extra rice.
