Recipe Modification: Satay Grilled Goat Meat Without Skewers

I rarely cook goat meat because it requires a long and tricky process. Goat meat should not be washed before processing because it will cause an unpleasant odor that will spoil the food. But if you don't wash it, it's dirty.

So goat meat must be boiled first to remove dirt, then the boiled water is removed, the meat is drained, then it is processed with spices and cooked again.

If you want the meat to be tender quickly, you can also soak the meat first with grated pineapple or various spices for a while.

Last week, my in-laws gave us goat meat, so I have to cook it. After a few days of being stored in the fridge, I finally had the mood and spirit to process the goat meat about two days ago.

Previously, I was looking for a recipe for processed goat meat that was rather simple and looked delicious. From several recipes I saw on the internet, I was interested in trying this one: Sate Kambing Guling (Satay Grilled Goat Meat).

To make things easier and save time, I didn't putting pieces of meat on skewers one by one. Instead, I modified the recipe to just "Grilled Goat Meat". Here's the recipe.



GRILLED GOAT MEAT



The Ingredients

Ingredients for soaking meat
  • 1/2 kg goat meat
  • 1/2 pineapple

Ingredients for boiling meat
  • Ginger
  • Galangal
  • Lemongrass
  • Bay leaf
  • A little salt
  • Water

Ingredients for sauteing
  • 1 tbsp cooking oil
  • Garlic
  • Red chili
  • Oyster sauce
  • Lime
  • Soy sauce
  • Salt to taste
  • Enough water

Soy sauce ingredients
  • Cayenne pepper
  • Red onion
  • Tomatoes
  • Soy sauce
  • Enough boiled water
  • Salt to taste


How to Make


  • Mashed or chopped pineapple. Soak the meat in the pineapple chunks for up to 30 minutes, so that the meat tends to be tender.

  • Clean the pineapple attached to the meat and boil the meat in boiling water with the boiling ingredients for 5 minutes. This is the process to clean the meat and remove odors.

  • After 5 minutes of boiling, remove the meat and drain it. When it is a bit colder, cut the meat into smaller pieces.

  • Fry the ingredients for sautéing and the meat until they change color. Add some pepper if you want it spicier.

  • Pour a little oil or margarine on the grill. Grill the meat over medium heat.

  • Remove them when it's done and place them on a plate.

  • Prepare the ingredients for making soy sauce. Slice the red chilies, onions, and tomatoes. Pour in the soy sauce and a little boiled water, and add salt to taste. Place it in a separate container.

How to Serve

  • Serve the grilled meat with warm rice, cucumber, tomato slices, or lettuce leaves (optional).
  • Pour the soy sauce over the meat. Grilled goat meat is ready to eat.

How about the recipe above? Do you think it's quite difficult or easy to make? For me personally, the process of making it is quite complicated and takes a long time, so maybe I won't make it often. Maybe I'll just make it again next year :D

Yea, somehow we can't follow the exact recipe. There's always a taste adjustment or it depends on ingredients' availability.
