My Mom's recipes for soups are comfort-by-the-spoonfuls!

I share with you, once again, a recipe from my Mom. It is nothing spectacular but is guaranteed to be flavorful and a bow of comfort.

Chicken Soup with Broccoli, Cauliflower, and Potatoes

Sauté the boneless chicken pieces

in cooking oil, garlic, ginger, and onions is the first thing you should do.

Adding just a pinch little salt

to the chicken while it is being sauteed will enhance the flavor of the chicken.

Then add pepper, chicken seasoning, and water.

Or alternately, you may add chicken broth instead og chicken seasoning and water.

Cover the pan to boil.

Lower the heat after it boils to simmering for the chicken and seasonings to meld.

Peel the potatoes.

I did not bother to cut the potatoes anymore since they were small enough. Do not forget to taste the soup and correct the seasonings if needed. To correct the seasoning garlic powder, or onion powder, or even ginger powder, or salt.

It is time to add the potatoes!

Then cover the pan once again to cook the potatoes for 10 minutes.

After ten minutes, add the broccoli and cauliflower to the chicken soup and cook another for 5 minutes.

Add the jalapenos after 5 minutes, which is optional.

Cook for another minute until the potatoes are soft.

Now it is done!

Scoop some goodness into a bowl, and ENJOY!

I used to take this soup with rice, or a roll, or a slice of French bread. My Mom served chicken soup to us that way. This soup is simple and tastes divine. It is a complete meal by itself. The potatoes are a starchy vegetable and primarily composed of carbs, and it is sufficient for my needs. Sometimes I add carrots. If I do, I add it to the soup at the same time as the potatoes.

Adding paprika is good for this recipe, sis. I suggest adding the paprika with the chicken before the seasonings and the broth is appropriate. YUM!
