The Food For Today Is Gizdodo

Gizdodo is a delicious Nigerian dish. It is basically stew made with gizzard and plantains. Here's a simple recipe for you:

We'll start with the ingredients

Ingredients:

  • 500g gizzard, cleaned and chopped(you can use either chicken gizzard or turkey gizzard)
  • 2 ripe plantains, diced(or more if you want)
  • 1 onion, chopped
  • 3 bell peppers (1 red, 1 green and 1 yellow), diced
  • 3 tomatoes, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • 1 teaspoon of paprika
  • 1 teaspoon of dried pepper flakes (optional)
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions:

  1. Heat some oil in a pan and fry the diced plantains until golden brown. Remove and set aside.
  2. In the same pan, add more oil if needed and sauté(fry) the chopped onions and minced garlic.
  3. Add the chopped gizzard and cook until browned.
  4. Stir in the diced bell peppers and tomatoes, and cook for a few minutes until they soften.
  5. Season with thyme, curry powder, paprika, dried pepper flakes (if using), salt, and pepper. Mix well.
  6. Cover the pan and let it simmer for about 10-15 minutes, or until the gizzard is tender and cooked through.
  7. Add the fried plantains to the pan and gently mix everything together.
  8. Cook for another 2-3 minutes to allow the flavors to blend.
  9. Serve hot and enjoy your homemade Gizdodo!

Note: Your gizdodo can be served with cooked rice(preferably white rice)

Paprika is a spice made from dried, ground red peppers.

In case you dont have access to paprika, you can use the following substitutes:

  1. Chipotle chili powder (For smoked sweet paprikas)
  2. Cayenne pepper powder (For hot/sharp paprikas)
  3. Ancho pepper powder (For sweet paprikas)
  4. Guajillo Pepper powder (For hot/sharp paprikas)
  5. Chili powder (For hot/sharp paprikas)
