Hungarian Cooking - Stacked Potatoes a.k.a. Rakott Krumpli

Once again I thought I'd post some food. But since it's neither Mexican (just made in Mexico with local ingredients), and certainly not vegan, it won't be part of a series, just standing on its own here. For me, this dish is a significant comfort food, combining great tastes I remember from my childhood. Also, it's fairly simple to make.

What You Need

The exact quantities are not so important, and if you do it right you'll end up with a bit more than anticipated, particularly since it all depends on the size of your pan. So the amount is just a rough guideline.

1-2 kg of potatoes
1 kg of eggs
500 g of spicy Hungarian sausage (or some type of chorizo)
500 ml of greasy sour cream
a bit of butter
salt, pepper, and your favorite kitchen herbs

How You Make It

  • First boil the eggs and the potatoes until soft. You can use the same water. Though the eggs should be ready sooner than the potatoes, leaving them in the hot water longer won't hurt them.
  • In the meantime you can prepare a wide pan by applying the butter liberally to cover the inside. You can also turn on the oven, and pre-heat it at 200°C (400°F).
  • Cut the potatoes into thick slices, and cover the bottom of the pan with them. Fill in the spaces with broken bits of potato. Add some salt at this point.

  • Cover the potatoes with a generous layer of cream.
  • Cut / rip the sausage into slices / pieces and and add a layer of them on top of the potatoes. This time you won't need a continuous layer, which can be pretty impossible anyway if your chorizo breaks into chunks. It's all good though.
  • Cut the eggs into slices, and add a good layer of it on top of the sausage.

  • The original recipe calls for another layer of potatoes, but in my opinion that would just make the dish too heavy on potatoes. But to each their own...
  • Finally, cover everything with a good layer of cream, add some salt and pepper, and any herbs you may like. I used fresh parsley here.

  • Put the pan in the oven for a good half an hour, or until the eggs start looking ready.

Done and Delicious!

This amazing dish can be tweaked and modified, catering to any tastes. Try using cauliflower instead of potatoes, or taking minced beef instead of chorizo, adding Brussel sprouts or cabbage... The possibilities of stacking ingredients are endless. Wait, did I just invent the casserole? ;-)

The best thing is when we don't use the exact quantities of the ingredients. My husband is always wondering why I don't know how much of each ingredient I put into the food. You know, egy csipetnyi ez, egy csipetnyi az, and the delicious food is ready :D
