I picked another round of fresh spinach from the garden towers in the greenhouse to make Alfredo for a side dish to the baby back ribs.
I simmered the ribs on the stove for 1 1/2 hours before marinating them with a jar of Jalapeno Cowboy Candy that I made last fall. It is a wonderful sauce for any pork or chicken dish. While the ribs were finishing under the broiler I prepared the Alfredo sauce.
After washing the spinach, I sautéed the leaves with some garlic, onions, and olive oil.
I keep a jar of homemade alfredo mix in the pantry. All I need to add is the cream, parmesan cheese, and cream cheese (optional) simple and easy for making a creamy recipe.
Alfredo Sauce Mix
1 cup dry milk powder
2 tsp salt
1/2 cup cornstarch
1/2 tsp fresh ground black pepper
1 tbsp garlic powder
To Use: In a saucepan, whisk together 1 cup of cold milk, 1/2 cup of mix, 1 cup grated parmesan cheese, and 2 oz cream cheese (optional).
Turn heat on medium and heat until smooth and thickened, stirring constantly.
Once the sauce has thickened to my liking, I tossed it with the cooked spaghetti, some red pepper flakes, and dinner was ready.
I have to admit, having the fresh picked spinach had a nice strong flavor compared to what I buy at the grocery store. I'm going to start another round of seedlings to continue enjoying their scrumptiousness.
