Chicken Pulao Recipe

Chicken pulao is a popular South Asian dish made with chicken, rice, and a variety of aromatic spices. Here is a simple recipe to make chicken pulao:

Ingredients:

1 pound boneless chicken, cut into small pieces
2 cups basmati rice
3 tablespoons oil
1 large onion, thinly sliced
2 garlic cloves, minced
1 inch piece of ginger, grated
2 green chilies, sliced (optional)
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala powder
1 cinnamon stick
2 cardamom pods
2 bay leaves
Salt, to taste
4 cups water
Instructions:

Rinse the rice in cold water and soak it for 30 minutes.
Heat oil in a large pot over medium heat. Add onions and fry until golden brown. Add garlic, ginger, and green chilies and fry for 1-2 minutes.
Add the chicken pieces and cook until lightly browned on all sides.
Add cumin seeds, coriander powder, turmeric powder, garam masala powder, cinnamon stick, cardamom pods, bay leaves, and salt. Stir well and cook for 1-2 minutes.
Drain the rice and add it to the pot. Stir well to coat the rice with the spices.
Add water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes or until the rice is cooked and the water is absorbed.
Once the pulao is ready, remove it from the heat and let it sit for 5-10 minutes before fluffing the rice with a fork.
Serve hot with raita, salad, or your favorite side dish.
