We made pot pies with turkey leftovers from Thanksgiving

We ate the Thanksgiving leftovers for a while, but then ended up freezing a bunch to use later on. An entire turkey is a lot for just two people. We weren't able to get together with friends or family for Thanksgiving for obvious reasons. We're working on getting a new freezer, but in the meantime, we are trying to use up a bunch of stuff we've already got in the freezer already.

This isn't a precise recipe so much as a story and an idea with some photos. There wasn't really a recipe for this other than get some pie crust and make what's basically a thick soup that goes in the pot pie. The most important thing is to make the filling first and let it get cold before you make the pot pies otherwise it makes the crust soggy.

The filling

The filling was made with chicken stock, potatoes, carrots, green beans, onions, and leftover cooked Turkey. There was some starch used to thicken it a bit. Then, as I mentioned before, we let it cool down before we assembled the pot pie. Salt (seasoned salt) and pepper were added to taste, as well as a little bit of Penzey's Sandwich Sprinkle. That stuff tastes delicious on everything, not just sandwiches.

Our style is just to kind of throw things together that seem like they'll be delicious, and it usually works out because we've done it 10,000 times and have learned from thousands of mistakes. If you're not at that level, there are definitely great recipes that you could search out for some guidance. I apologize that this isn't one of those recipes.

Our pie crust was storebought. I won't lie. It's not hard to make, though, and we've done that before as well.

When this filling cools down, it also thickens up pretty nicely. Just kind of ignore the fact that it doesn't look that appealing in its current state. If you don't like how it looks, you're in luck... you're going to put a blanket (of dough) over it and cover it from sight.

You'll want to cut some slits into the top to vent it so that it doesn't just bubble up and explode.

We baked ours for about 30 minutes in a 400ºF oven, until it was golden brown as you see in the first photo.

So maybe it's not the prettiest thing you'll ever see, but it's flaky and delicious.
