Autumn Applesauce Buns

Hi, Beautiful People!

Finally we have a sunny day, after a week long of thick fogs. Last weekend we went for a road trip to a neighboring city, 3 H away, driving in thick fog (too). Wasn't fun at all, but at least we got some Halloween goodies 😁 Altho! We will have to drive back this coming weekend (boo-hoo), as one of the goodies we got was a costume, and even though we grabbed the XL one for my 9 yo, it's not gonna be big enough for the actual Trick or Treat time. In Canada, we need way larger costume than it should be, as we have to put on our Winter gear under our costume 🀣🀣🀣🀣

I hope you had a nice weekend?! Ours was a long weekend one. Regardless the meh weather, I had a good one, I must say 😊 I just love road trips. I mainly sleep in the car though 🀣🀣🀣🀣 Now, Thanksgiving is in a couple of days, another long weekend for us, yay!

Anyhoo!

The following buns is buttery and good. You can bake them as the recipe below, or you can add allspice, cinnamon, nutmeg, pumpkin pie spice, apple pie spice, for Autumn flavor 😍

You don't need cupcake wrapers, bake directly in your muffin pan would make them more to buns than muffins, however I did use wrapers as I baked them for school snacks. Easier for me to store, pack, and less fussy and less messier for my boys 😁

2 c of flour
1/4 c sugar
1 1/2 tbsp BP
1 c buttermilk
114 g unsalted butter
1 egg
1/2 tbsp vanilla essence
Unsweetened Applesauce (watch the vlog)
Honey for brushing
Chopped or sliced almond
Apple pie/pumpkin pie spice, if using

Mix dry ingredients in a bowl, set aside

Melt butter in microwave
Mix buttermilk with egg and vanilla essence then stir in melted butter

Mix dry ingredients with wet ingredients until just combined

Using ice scream scoop, scoop 1-2 scoops of thick dough onto muffin pan (you can line with muffin wrapper or directly onto the nonstick muffin pan)

Spoon 1 tsp Applesauce in center and bake buns for 20-25 mins (depending on your oven) on preheated 375, until golden brown
Take out, brush with melted honey, then sprinkle with almond
If you'd like to make them Autumn flavor, sprinkle with spices before baking, then sprinkle with almond - and omit the honey 😊
