Delicious Banana-Blueberries Muffins

Hello, Hello, Hello 🤗

We left home to work and school in snow pants and winter jacket again this morning. Hats and gloves too. Big meh. Freaking cold. Super windy, snow drifting everywhere. Winter is back 😩😩😩😩

Funny was, on Saturday night, the sky was super beautiful and northern lights were dancing bright. It was such a sight. Now we are back to miserable weather 😅🥺😅🥺

I sent the boys to school with these following muffins by the way. They are moist and nice. I baked them in larger muffin tins, making them look like Tim Horton's 😁

1/3 c unsalted butter, melted
1 egg
1 small individual tub blueberry Greek yogurt
3 ripe bananas
1 1/2 c enriched flour
1/3 c + 2 tbsp sugar
1 tsp BP
1 tsp BSoda
A generous pinch of fine sea salt
1 tbsp chia seeds
1 tbsp flax seeds
1/4 c steel cut oats
3/4 c frozen blueberries
Sprinkling sugar (optional)
