It's snowing again today. We woke up to whiteness all around town. It stopped snowing later. Then snowed again. Stopped again, snowed again, over and over. For awhile it looked like it had totally stopped, so I planned to walk to my son's school later in the day, to pick him up, and 2 mins in, snowed again. I had to rush back home to grab the car keys instead πππ
I was gonna visit some friends who work at our local college. Drove to Tim Horton's thinking I'd grab them some muffins, but nope, detour signage were everywhere. I couldn't reach Timmies, so I drove home instead.
Today, weather wise and road closure wise, are just miserable π Like seriously. It wasn't easy to drive around. Snow like storm made it hard to see, and with road closure here and there, too many cars out and about, driving impatiently and less carefully πππ
That being said. I haven't work in my backyard still βΉοΈ Come on, Winter, be over already, please π
Today's recipe is super simple, like no hassle at all, but boys like it. I served it with warm rice, of course. Rice is life for us, Asians π
600 g chicken breats, skinless boneless
10 baby potatoes
1 can of condensed mushroom soup
1 medium-sized purple onion
Slice chicken either finger strips or cubed, placed into a bowl or plate
Quartered baby potatoes, I used mixed colorful baby potatoes, place them into the plate as well
Slice thinly the onion, and add them into the plate with the chicken and potatoes, mix until well combined
Dump mixture onto aluminum foil lined rectangular pan
Cover with another aluminum foil, and bake chicken on preheated 300 F for 1.5 H
