Receta de tortilla de patatas con berenjena

It's been a while since I've posted anything and I'd like to get back into the habit of doing it more often, due to lack of time or tiredness I've been leaving it but we're going to try to get back into the routine, so today I bring you a simple recipe, the famous Spanish potato omelette with a different twist.

Buenas hace tiempo que no publico nada y me gustaría retomar la costumbre de hacerlo mas a menudo, por falta de tiempo o por cansancio lo he ido dejando pero vamos a intentar volver a la rutina, así que hoy os traigo una sencilla receta, la famosa tortilla de patatas española con un toque diferente.

Ingredientes:
  • 3 Patatas
  • 1 Cebolla
  • 6 huevos
  • Aceite de girasol
  • 1 Berenjena
  • Aceite de oliva, sal y pimienta
Ingredients:
  • 3 potatoes
  • 1 cebolla
  • 6 eggs
  • Sun flower oil
  • 1 aubergine
  • olive oil ,salt and pepper

Cut the potatoes, aubergine and onion into discs, and the onion and aubergine into small pieces. Heat a frying pan with plenty of sunflower oil for the potatoes, and in another pan with a little olive oil, add the aubergine and onion.

Cortamos las patatas, la berenjena y la cebolla, las patatas las cortamos en discos, la cebolla y la berenjena en trozos pequeños. Calentamos una sarten con abundante aceite de girasol para las patatas, y en otra con un poco de aceite de oliva echaremos la berenjena y la cebolla.

Fry the potatoes until golden brown, add a pinch of salt and black pepper to the onion and aubergine and cook over a medium heat until golden brown and soft.

Freímos las patatas hasta que cojan un color dorado, a la cebolla y berenjena le echamos una pizca de sal y pimienta negra, la cocinaremos ha fuego medio hasta que queden doradas y blanditas.

Beat 6 eggs in a bowl and add salt and pepper. When the potatoes, onion and aubergine are ready, add them to the mixture.

En un bol batimos 6 huevos y les añadimos sal y pimienta. Cuando las patatas, la cebolla y berenjena estén en su punto los añadiremos a la mezcla.

Put a frying pan with a little oil on a low heat, then add the mixture. If we want the mixture to set just enough, it is best to leave it for about 2 minutes on each side, if we want a little more, a minute or two more is enough, but the most important thing is that it is on a low heat so that it does not burn.

Ponemos una sartén con un poco de aceite a fuego bajo, ahí echamos la mezcla, si queremos que cuaje lo justo la mezcla lo mejor es dejarlo unos 2 minutos por cada lado, si queremos un poco mas con un min o dos mas tendremos lo suficiente, pero lo mas importante es que este a fuego bajo para que no se nos queme.

A large plate, frying pan lid or tortilla turner plate is used to turn the tortillas.

Para darle la vuelta nos ayudaremos con un plato grande, tapa de sartén o un plato volteador de tortillas.
