Adobong tahong(mussels) and malunggay(moringa)

My weekly grocery was scheduled yesterday. I was tired the whole week that I didn't have time to make a list. I didn't make a weekly menu also, so when I got in the market I just bought whatever comes to mind. When I went in the seafood section, I bought a milk fish. The lady asked it there's still anything I want. I said no and asked her to clean the fish for me. While waiting, my eyes caught a bunch of mussels. I thought of making a soup. So I asked the lady to pack me 500 grams of mussels. I also bought malunggay/moringa to add to the soup. When I got home, I checked my memos for the recipe of the soup. Nothing came out except for the adobong tahong/mussels and malunggay/moringa. So I tried to cook if for the first time. INGREDIENTS:

500 grams mussels, cleaned and beards removed
vegetable oil, for sauteing
1 (1-inch) piece ginger, minced
2 cloves garlic, crushed and minced
1 onion, diced
3 tablespoons soy sauce
2 tablespoons vinegar
1/2 cup reserved mussel broth
1 tablespoon brown sugar
1 bay leaf
pepper, to taste
1 cup malunggay leaves

PROCEDURE:

▪Place mussels in a pot and add enough water to cover. Bring to a boil and cover with the lid, allowing mussels to cook. Once shells have opened, remove from heat and drain. Discard mussels that remain closed. Set broth aside.

▪Once cool enough to handle, remove meat from shells. Set mussels aside.

▪Heat oil in a pot over medium heat. Saute ginger and garlic until fragrant. Add soy sauce, vinegar, mussel broth, sugar, bay leaf, and mussels. Season with pepper. Simmer for 3 to 5 minutes.

▪Add malunggay leaves. Simmer for another minute. Remove from heat and transfer to a serving bowl.

Moringa leaves has many health benefits. It's an excellent source of many vitamins and minerals like: Protein, Vitamin B6, Vitamin C, Iron, Riboflavin(B2), Vitamin A and Magnesium. It may also lower blood sugar.

Let's eat healthy especially in this time of pandemic.
