New world boat noodles in Chiang Mai

Another (not really a) hidden gem in old town Chiang Mai, a place where the magic of the Thai cuisine comes to life in a bowl. Something dark, something bloody.. boat noodles?

Boat noodles, originating from Thailand, are a rich and flavorful noodle soup. Named for the boats they were traditionally sold from in Bangkok's canals, they include small portions of noodles, meat (often pork or beef), and a dark bloody (real blood yes) broth usually seasoned with soy sauce, dark soy sauce, and various spices.

Some people love it. Some people hate it.

Now, you guys know I love a good hunt for food places. This new fancy-looking boat noodle joint is so well hidden that even Google Maps throws up its virtual hands in despair. It's just there tho! Right on the stript with loads of restaurants nestled right next to the majestic 3 Kings Monument. You can't miss it!

On walking in, the first thing that hits you is how squeaky clean everything is. Seriously, you could probably eat off the floor. Not that I recommend that, of course. What really caught my eye was the open kitchen, the honest transparency of their operations. You can see them cutting fresh beef and pour in the bloody soup.

Kevin and I opted for the noodle soup with an assortment of meats, innards, and meatballs. Hold on, don't gag just yet! If you've never tried a 'nose-to-tail' dining experience, you might be pleasantly surprised. I absolutely loved the spicy and sour dipping sauce, a flavor bomb that cuts through any richness. Kevin, though, my dear carnivorous boyfriend, wasn't as thrilled. More for me, I guess!

The noodle soup itself was divine. The flavors intermingling in the most joyous way. The meat was tender, the soup was incredibly flavorful. Big plus for the cleanliness. Anohter plus is, for this quality, you pay for just so much, super affordable. Two thumbs up from yours truly!

If you ever find yourself in old town Chiang Mai, you've got to put on your explorer hat and hunt down this elusive boat noodle place. Fancy everything but reasonable prices and so clean!

Looks so delicious buh can't get this type of noodle in my area, can normal noodles do the recipe?

100% maybe tried the blood in the soup but mix and match that with your country type of noodle. I would love to see how that turns out!
