Simple and healthy recipe: Squash and string beans with moringa in coconut milk sauce.

Hello lovely Hivers and hello Foodies Bee Hive Community. I hope we are all doing great today 🌸

For today's blog I will show to you one of my favorites dish that is very simple to prepare and cook and also it's healthy because it's made of vegetables and coconut milk.

This recipe is easy to make and also affordable. If you are living in a country side like me and planting some vegetables on your backyard then you will save money for buying vegetables in the market.

So let's start with the ingredients:

-String beans
-Squash
-Garlic
-Onion
-Green chili
-Coconut milk
-Moringa leaves
-Dried baby shrimp

This squash, string beans and green chili were freshly harvest by my Aunt on their farm and I only bought it for a very affordable price. As for the coconut milk and dried baby shrimp , we have some stock here that I bought on the supermarket. I grab some moringa on our backyard because we have few moringa trees there

Preparation:

-First you need to peel of the skin of the squash and cut it into square bite size.
-Cut the string beans like on the photos. You can cut it by knife or you can just cut it by your hands it's fine. As for me I only cut it by my hands.

-Slice the onions and garlic into your desire shape and size. As for me I choose to slice it that way.

-After slicing the vegetables, wash it with tap water and drain in while preparing the pan for cooking.

Cooking time!

-Put an oil into the pan and put the garlic and onions. Once the onion is translucent and the garlic is brownish you can now put the dried baby shrimp.

-After a few seconds you can now add the squash and string beans. Put some pepper and fish sauce for the added flavor.

-Mix it until the ingredients are well combined and you can now add the coconut milk and the green chili.

-Wait for it until the vegetables are finely cooked then add some moringa leaves and taste it before turning off the stove.

This kind of dish is popular in our country and most loved as well. It's easy to cook, ingredients are not difficult to find, and perfect combo with fried fish like galunggong.
