Sweet potato starch noodles mixed with vegetables - Eco Train Cooking on A Budget Competition! #2

This week's competition is really interesting to me. Noodles are one of my favorite foods, and I don't mind eating them every day. Today I am going to share with you a healthy, fresh Korean noodle dish that you can prepare on a budget. Doesn't matter if you eat it hot or cold, this is one of Korea's best-loved dishes called Japchae which you can easily find in any Korean restaurant. Normally they mix the noodles with vegetables and meat, but today, my recipe comes up with a vegetarian version with veggies and tofu.

As you may know, there are many different types of noodles. The noodles can be made from plain flour, rice flour, wheat, or even green beans... The noodles that I use today come from sweet potato starch, making them a healthy choice for noodle lovers.

INGREDENTS (4 SERVINGS)

  • 200g sweet potato starch noodles
  • 1.5 cups shredded carrots
  • 1.5 cups shredded green beans
  • 1 cup small oyster mushroom
  • 1 cup fried tofu
  • Optional: 1 cup Lamyong soy slices (made from soy protein, starch, gluten, vegetable fiber, vegetable oil)
  • 2 tbsp sesame seeds
  • Salt, pepper, oil

SAUCES

  • 4 tbsp soy sauce
  • 2 tbsp sugar
  • 1 tbsp sesame oil
  • 4 tbsp Korean Taeyangcho Gochujang (Hot Pepper Paste)
  • 1 tsp garlic powder

HOW TO PREPARE

  • Soak the sweet potato in water for 15 minutes and bring them to boil until the noodles come up with a soft, chewy texture. Take off from the heat then rinse the noodles in cold water, strain and cut them with kitchen scissors.
  • Cut the carrots, green beans, mushrooms, fried tofu into thin slices
  • Soak the Lamyong soy slices in water for an hour, then also get them cut into slices
  • With 1 tbsp of oil in a large pan, stir fry the Lamyong soy slices and oyster mushrooms, seasoning with some salt and pepper, then pour them out to a separate bowl.
  • Continue using that pan to stir fry the carrot, green beans, I also added some bamboo shoot left over in my fridge since yesterday, but this is not a main ingredient, you can choose to have it or not
  • Put the sesame seeds into the microwave for 2 minutes

MIX AND SERVE

  • Mix the sauce in a small bowl
  • In a large bowl, mix noodles, veggies, mushrooms, and Lamyong soy slices with the sauce.
  • Serve in a bowl or dish, put the sesame seeds and fried tofu slices on the top

Tadaaaa! It's ready to eat. As I mentioned, the dish tastes good whether it's cold or hot. I prefer to eat it cold. Such a perfect dish for hot summer in Sydney currently!!!

Yeah, it's super easy to make, the step that waste most of the time is chopping the ingredients. This Korean sweet potato noodle is very popular in Korea, good choice for healthy meal! :)

Món này thực ra má chồng tui làm, tui chỉ chụp hình và ghi lại công thức, kaka :D

Ôi nhìn mấy cục nấm cưng xỉu, t cũng thích làm mấy món mì xào như nào, thươngf mua miến về làm. Hnay thấy bà làm với mì từ khoai tây cũng khá hay

Uh đây mì khoai lang á, ăn diet được luôn tại nó ít carbs hơn mấy mì làm từ lúa mì và lúa mạch, mà tui chỉ trộn chứ ko xào, rau thì xào cho chín thoi, k thích dầu thì trụng nước sôi cũng dc!
