Cuando leì la pregunta No.1: ¿Qué comida nunca has comido pero te gustaría probar? inmediatamente me vinieron a la memoria recuerdos de mi niñez, cuando en los cumpleaños de mis hermanos, mi papà nos llevaba a comer al restaurant chino del pueblo. Ellos siempre pedìan lo mismo y mi padre los complacìa. Yo pasaba la vista por toda la carta y me llamaba la atenciòn un plato que decìa: "Pato laqueado pekinés" y habìa una foto con un enorme pato horneado que nunca pedimos, pues nunca nos poniamos de acuerdo en el menù.

They always asked for the same thing and my father comlaciated them. I looked around the menu and was struck by a dish that said: "Pekingese lacquered duck" and there was a photo with a huge baked duck that we never asked for, because we never agreed on the menu.

After adulthood, although I have gone with the family many times to eat 'Chinese food', we never asked for that specialty, because not all restaurants offer it and on the other hand, the rest of the family always preferred something else.
Nowadays, although it is more difficult to eat out because of the costs that this implies, it is one of my projects to invite a group of friends on some special occasion to agree to share this traditional dish in a good Chinese restaurant that offers food. typical Beijing.

The Lacquered Duck is a traditional dish of Peking Chinese cuisine, they say that it was the dish that the Chinese emperors ate, so it was a symbol of dignity and power, before it became popular.
To prepare it, ducks that can weigh up to more than 3 kg are used. First, you have to clean it well and remove all the viscera. Then, in order for the skin to separate from the meat, the duck must be inflated. This step is very important so that a perfect lacquered duck remains.
Después hay que barnizarlo con un melaza y cocinarlo al horno durante un buen rato. La colocación del pato dentro del horno es importante, pues hay que sujetarlo en un palo para que así la grasa se vaya fundiendo poco a poco. La melaza y la cocción lenta le darán a este plato una textura muy crujiente que debe estar deliciosa. Se sirve con una salsa dulce y una ensalada ligeramente picante. Hay que probarlo!
