I grow what I call a Surprise Garden. I plant seeds, kitchen scraps and sometime something grows. Which is a wonderful surprise. I've grown kitchen scrap celery, bell pepper, green onion. You just never know what will grow. Which is why it's always a surprise when they do.
So nice idea. I actually took couple of sunflower seeds from my breakfast & planted them.
I should try your idea too.

We were able to take small celery stalks off of our kitchen scrap surprise for months. They never grew as big as when I bought the celery at the store, but it consistently grew new stalks. They were enough for us to chop up in salads or soups.
The green onion kept us in chives for months as well. Anytime I wanted some chives for my ramen or as a splash of color is salads all I had to do was snip some from my kitchen scrap surprise green onions.
I don't have much space to try things which you do, I only have small plants & out of curiosity, I planted 4-5 sunflower seeds & now, I'm inspired by you to do more.
Green onions - I tried in past but it invites lot of worms & insects. What do you do for it?
We live in a dry area and I use pots to grow them in because the ground is rocky. There are lots of deer so even if I did grow them in the ground they would get eaten up. I have the pots upstairs on a covered outdoor area. Pretty low fuss and easy to keep up with since I never know what will grow and what will not. Right now I have garlic and beans growing. I did find some okra seeds in an old box. Based on the slip of paper that was insdie the plastic bag of seeds, they were given to me from a local gardening club about 10 years ago. So that was a fun find. I planted about four seeds and they are growing in a pot outside. So that's been another sort of surprise. I guess seeds can stay viable for a long time.
