I’m not going to let it get me down, but it really sucks that more and more “local” restaurants and cafes in Tokyo are run by design companies, tech companies, etc.

The food is just a sideshow to their wares? Or is the food the result of the tech? eg, robotic recipes and un-manned places to eat?

I guess they want a place to show off to their clients and do business that feels “organic” and “at home” except it doesn’t. And it’s nearly impossible for regular people to start a restaurant now.

I know some real local places where the boss and staff have full time jobs and that’s just a side gig 😵

That's fine. Saizeriya is a good one. What I didn't like were restaurants in Ueno that has expensive side dishes that we thought were free. It's almost like deceptive marketing that you don't expect in Japan, a country known for honesty.

I guess it's fine if you don't mind no one being able to start their own business and be 100% under the control of corporations with no wiggle room...

Ah, gomen. I was speaking on the point of view of customers. Things like that also happen in our country. A promising restaurant starts and later acquired by Jollibee. Soon their menu changes and they somehow lose the touch that made them unique.

Damn it. This kinda sad, I guess. 😞
