¡Me encantan los suspiros! Cada vez que subíamos a El Junquito o La Colonia Tovar, la compra de suspiros era algo obligatorio. Formaba parte del paseo así como llenarnos la ropa de buruzas, partículas de los suspiros.
Imagínense pues la gran alegría que nos produjo encontrar estos dulces tan venezolanos en nuestra breve visita Portugal. Nos emocionamos y compramos un paquetito. Tienen el mismo sabor o muy similar. Es delicioso sentir como se derriten en la boca. después de morderlos.
Aprendí a hacerlos en Caracas. Es bastante sencillo:
Se necesita la clara de un par de huevos, cuidando que no se filtre nada de la amarilla, suficiente azúcar, unas gotitas de jugo de limón y/o vainilla y batir a punto de nieve, es decir hasta que la clara se vuelva cremosa y de intenso color blanco. El azúcar se va agregando poco a poco y al final las gotitas saborizantes. Luego con una cuchara de se van colocando sobre un envase o papel de aluminio y se hornean por unos 20 minutos , cuando se observe un delicado tono dorado.

I love sighs! Every time we went up to El Junquito or La Colonia Tovar, buying sighs was mandatory. It was part of the walk as well as filling our clothes with buruzas, particles of sighs.
Imagine the great joy that we found finding these very Venezuelan sweets on our brief visit to Portugal. We got excited and bought a little package. They taste the same or very similar. It's delicious to feel how they melt in your mouth. after biting them.
I learned to make them in Caracas. It's quite simple:
You need the white of a couple of eggs, taking care that none of the yellow one leaks out, enough sugar, a few drops of lemon juice and/or vanilla and beat until stiff, that is, until the egg white becomes creamy and of an intense white color. The sugar is added little by little and at the end the flavoring droplets. Then with a spoon they are placed on a container or aluminum foil and baked for about 20 minutes, when a delicate golden tone is observed.
