Its only the second time I used quince in a recipe… you find these fruits fairly often in gardens but they are seldom sold in shops. So I only use them since we have them in our garden :-DDD I just wrote @jcrochet that I saw new varieties of quince in a garden center which are bred so that you can eat them raw. I think these new breeds are less hard and less bitter…
And yes to the candy, so strange that such a hard and woody fruit can taste so nice :-DDD
