I've been making this salad quite a lot lately, and I think it's going to be my go-to salad for this summer. It's just so quick and easy to make and really tasty.

- Lemon Vinaigrette
I haven't put amounts because it just depends on what I have in the fridge that day and whether I feel like adding a little more onion or perhaps more tomatoes. I used about eight mini Roma tomatoes in this one. They taste amazing!
For the chickpeas, I've used plain ones and added a bit of oil and garlic to flavour at times. This one is made with a little tin of chickpeas I got from the supermarket that was pre-flavoured with olive oil, garlic and rosemary. They also have a lemon flavour. These make throwing the salad together so quick and easy.
Dice everything up and toss together with a splash of the Lemon Vinaigrette dressing. That's it.
It's very filling.
