(RP) Yesterday we went looking for pink snails in LE VILLAGE.
They were discovered by the children a few days ago in their quest for four-leaf clovers.
Our cook at the inn has told us they're the best tasting variety, and he's eager for us to try his recipe.
Our search turned up 87, which should be enough to prepare the dish.
Yesterday's contest to guess this number was won by @noctury with the closest answer: 91, my compliments!
Our innkeeper doesn't give his full recipe, but agrees to share part of it.
He'll keep the snails for 24 hours in baskets lined with lettuce leaves and a thin layer of flour. (they will disgorge)
Then he'll wash them and cook them, first in a broth and then, after taking them out of their shells, in a sauce with lardons, mushrooms, shallots, garlic and a little red wine.
We're in for a treat.

Ils ont été découverts par les enfants il y a quelques jours dans leur quête de trèfles à quatre feuille.
Notre cuisinier de l'auberge nous a affirmé que c'était la meilleure variété d'un point de vue gustatif et veut absolument nous faire gouter sa recette.

Nos recherches ont permis d'en trouver 87 ce qui devrait être suffisant pour préparer le plat.

Le concours organisé hier pour deviner ce nombre donne pour gagnant @noctury avec sa réponse la plus proche: 91, tous mes compliments!

Notre aubergiste ne donne pas sa recette complète, mais accepte d'en partager une partie.
Il va garder les escargots pendant 24h dans des paniers dont le fond est recouvert de feuilles de salade et d'une fine couche de farine. (ils vont dégorger)
Ensuite il les lavera et les fera cuire, d'abord dans un bouillon puis après les avoir sortis de leurs coquilles, dans une sauce avec des lardons, des champignons, des échalotes, de l'ail et un peu de vin rouge.
