I've thought many nights about quitting and maybe start a career writing or doing some youtube channel
Just a word of advice, don't. Both of those careers are very hard to break into and isn't as easy as just doing it. When we're talking about Youtube you'll need to have ALOT of SUBS and views to make a livable earning off of it. And for writing, it really depends on what type of writing, but most people who work for publications only get paid pennies for the articles they put out.
If you do want to try that stuff out, do so. Just do it as a side thing and if it grows into something you can sustain, than that is when (IMO) you can think about quitting your day job.
