Something I really enjoy about these games is what you mention, at the beginning you are very weak but with the passing of hours and missions your character gets better and if you make certain combinations of items and powers you become really indestructible, you see a direct advance between the time you spend and the attack strength you get. I played a bit of skyrim but I left it because I felt very lost with all the freedom that one has haha

that tends to happen a lot, after you are very strong you have a whole world to explore but, why? do quests live them become even stronger and be a vigilante or the bearer of all destinies ? there is too much freedom xD you can simply be a farmer or free the world from evil.
