Hope you all had a great weekend! May 24th weekend is usually a pretty big deal around here, it’s considered the first camping weekend of the season and the people do just that!
Fishing, camping, hiking and some serious gardening as well.
I mostly worked on planting more seeds and preparing garden beds.
I found plenty of these beauties in the garden while getting the bed ready for planting, they’re HUGE!
This is a European ground beetle ( Carabus nemoralis ) and I’ve always loved their shiny and unexpected colourful shells. These are a blessing in the garden, they eat all sorts of bad bugs including SLUGS! Not many creatures eat slugs, but these will eat young slugs and their eggs too!
So be kind to them, and their larva, which are big long black crawly creatures. Like ladybugs, they often live in the leaves, so be careful when digging around the garden, be gentle and move them, or give them a space to hide.
Remember the saying, “leave the leaves,” you’re leaving them for amazing creatures such as this! Learn to work with nature, not against it and gardening becomes much easier! ❤️

I collected a bunch of dandelions and used the yellow parts for some seriously delicious cookies over the weekend too!
They were gobbled up quite quickly!
I plan to make some tinctures and infused oils as well. This morning I will go and collect a big bowl of the flower heads which I’ll dehydrate and store for later use.
I also harvested some garlic greens, asparagus and chives to make some amazing roasted potatoes over the open fire. It was delicious!
The fresh asparagus was particularly tasty!
This asparagus patch is several years old now, it’s been producing perfect spears for the last two years.
Asparagus can grow quite well once it’s established, this patch is a little spotty, but is indeed ready for regular harvest.
These potatoes rocked!!! 😍
I could easily eat food cooked over the fire every single day.
Anyway, I’m beyond excited for the change in weather and will not be missing the snow and ice one single bit! ❤️

Ah yes, fresh asparagus! That's definitely the best way to get it, better than store bought.
I must admit, I've never heard of dandelion cookies... 😀
I’m not a big fan of asparagus, but fresh cut and lightly steamed with some seasoning is simply amazing!
The Yellow part of the Dandelion doesn’t have a ton of flavour, but makes a great healthy filler for cookies and breads! Adds moisture to the mix. 🙂
