Tra le specialità della cucina italiana, c'è la focaccia, meno conosciuta della pizza, ma è un pezzo pregiato del settore pianificato. Come la pizza, la focaccia nasce come pasto per i poveri, fatta esclusivamente di farina, olio e sale e in superiore ci sono dei buonissimi pomodori.
La focaccia ha avuto negli ultimi decenni un'evoluzione dovuta alla globalizzazione, per cui è diventato oggetto di personalizzazione sia per gli ingredienti utilizzati nell'impasto, sia per la metodologia e sia per la farcitura.

Bei tempi, quando potevo (e non ero neppure allergica)🍕, che qui senza glutine è introvabile. Soprattutto compravo quella bianca pura, senza i pomodori. C'era una panetteria apposita, dalle parti dell'università, dove a noi studenti veniva facile farci un salto.
