Cooking a Simple Dinner for Sunday Night

Salted Vegetables Soup with Tomatoes and Tofu, Stir Fried Kyuri with minced pork and garlic!

Firstly I prepped the ingredients for the soup. All I needed was tomatoes, tofu and salted vegetables.

Boiled a pot of water and added in the tomatoes and salted vegetables.

After the soup is boiled for a while, lower the fire and add in the tofu for some gentle cooking.

For another dish, I needed Japanese cucumbers, minced pork and some chopped garlic.

I heated some butter in the pan and in goes the garlic!

Then, I browned some minced pork.

After the minced pork is cooked, then ai added in the Japanese cucumbers.

Added soup from the pot to the pan for extra gravy.

Let it simmer over low fire to cook the cucumbers.

We usually eat out for Sunday lunch after church so I only need to cook one meal for today. Even so, sometimes it is a biggest headache because after an exhausted day, the mind cannot seem to brain anything sometimes.

I even took time to think in the car after my chiropractic visit today. Thank goodness for the husband who toom the youngest son to nap so I could take a really speedy nap.

I decided to cook:

Salted Vegetables with Tofu and Tomatoes Soup

Ingredients:

  • Salted Preserved Vegetables
  • Tomatoes
  • A pack of soft tofu

This was really an easy one to be done which was why I chose to cook it.

Firstly, boil the tomatoes in a pot so that the skin can be peeled off easily. I always do this so we won't be eating the skin.

Next, chop up the preserved vegetables and cut the tofu into squares or rectangles. Boil up a pot of water.

Add in the ingredients one by one, except the tofu. Boil up the soup then lower the fire and add in the tofu last to avoid it from being disintegrated.

That's it!

Stir-fried Kyuri (Japanese Cucumber) with Minced Pork and Garlic

Ingredients:

  • 500g minced pork or any other minced protein
  • 4 to 5 sticks of Kyuri or Japanese cucumbers
  • diced garlic
  • butter

The first thing to do was to chop up the ingredients and marinate the minced pork with some oyster sauce, white pepper and some chicken stock.

Then heat up the pan with some butter in it. Toss in some chopped garlic and then brown the garlic a little. Next, add in the marinated minced pork to brown it too to get a bit of sear before adding in the chopped cucumbers.

The cucumbers may take a while to cook and soften. So I added in the soup from the other pot that I have already cooked earlier to simmer the dish in the pan at low fire. I usually cover with a lid and check on it after 10 minutes. When the cucumber can get cut through, it indicates it is soft enough and ready to be served.


As usual, the children ate with white rice and I ate these two dishes just like that. Simple yet nutritious, good enough for a quick homecooked meal and need not spend a bomb eating out.
