Today I want to participate with my delicious pea soup in the contest Qurator's: Hive Top Chef! |Something Meaty!, this week is about making any recipe as long as the main ingredient is meat in any of its versions. So I ran to my fridge and checked for meat and found a lizard with a bone and a beef foot. I immediately set to work making this soup.
Hola mis amigos cocineros, amantes de la buena comida, rica y tradicional. Hoy quiero participar con mi rica sopa de arvejas en el concurso Qurator's: Hive Top Chef! esta semana se trata de realizar cualquier receta siempre y cuando el ingrediente principal sea la carne en cualquiera de sus versiones. Así que me fui corriendo a mi nevera y verifiqué que tenia de carne y encontré lagarto con hueso y pata de res. De inmediato me puse manos a la obra en realizar esta sopa.
I've made this soup before, so many people must already know it. I make it just like my grandmother's recipe, only today I changed it a little bit by adding some cuttings that I had in my fridge.
Esta sopa ya la he realizado en otras oportunidades así que ya muchos la deben conocer. Yo la hago tal cual la receta e mi abuela solo que hoy le varié un poquito agregándole unos recortes de chuleta que tenía también guardados en mi nevera.
The first thing I do is put the meat in the pressure cooker, they also put the peas that I have left in water since the night before in the pressure cooker to soften them up a lot more.
Lo primero que yo hago es poner a cocinar la carne en la olla de presión, también se ponen a cocinar las arvejas que he dejado desde la noche antes en agua para que ablanden mucho más.
This preparation consists in adding a little bit of each vegetable you want, according to the amount of soup you are going to make you add banana, topocho, ocumo, chayota, carrot, always the hardest things and then add the auyama, celery and for the end we have already chopped the potato and the zucchini. While everything is boiling we are chopping the seasonings, for that we chop everything, onion, celeri, paprika, chili, garlic, cilantro and we put it to fry.
Esta preparación consta en agregar un poquito de cada verdura que tú quieras, según la cantidad de sopa que vayas hacer agregas plátano, topocho, ocumo, chayota, zanahoria, siempre las cosas más duras y luego agregamos la auyama, apio y para el final tenemos ya picadita la papa y el calabacín. Mientras todo v cociendo vamos picando los aliños, para eso picamos de todo, cebollín, cebolla, celeri, pimentón, ají, ajo, cilantro y lo ponemos a sofreír.
As the meat is already there, we add it to the pot, together with the other vegetables and the dressing. To finish, we fry the cutlets and add them together with the peas, stir well and be careful that it does not stick at the end of the cooking. If you want to add a little bit of short pasta you can do it too, like a minestrone.
A medida que ya esté la carne la vamos agregando a la olla, junto con las demás verduras y el aliño. para finalizar sofreímos los recortes de chuleta y los agregamos junto con las arvejas, removemos bien y tenemos cuidado que no se esté pegando al final de la cocción.Si deseas agregar un poquito de pasta corta también lo puedes hacer, como si fuera un minestrón.
At home we are in the habit of taking all the waste and doing something with it, for example with the shells we add them to the plants, they say that this is transformed into fertilizer, and with the bones and leftovers of food we accumulate them and we take them to the dogs of the street.
En casa tenemos por costumbre de tomar todos los desperdicios y hacer algo con ellos, por ejemplo con las conchas se las agregamos a las plantas, dicen que eso se transforma en abono, y con los huesos y sobrantes de comida los acumulamos y se los llevamos a los perritos de la calle.
