Today I want to propose an ancient recipe typical of the nearby areas, the best known Lunigiana. I'm talking about a particular dish usually served as a first course, the Testarolo.
Testarolo is a food made from wheat flour prepared in a peculiar way. Special cast iron pans are used that are heated over a blazing fire. Inside these pans, a batter is poured - a dough made from water and flour - quite liquid. The strong heat causes the water of the dough to evaporate, which is why all those little holes you see in the photos below form.
Repeating the Testarolo as described is rather difficult in everyday life. This is the reason why we more often resort to ready-made products, perhaps vacuum-packed or packaged and arrived directly from Lunigiana. A whole Testarolo is an expanse of circular-shaped pasta, about 3-4 mm thick and with a diameter that depends on the pan in which it was cooked: usually, between 35-45cm. Once opened it is cut into rectangular pieces, usually, I cut them into small diamonds.
Stacked on top of each other, they wait to be thrown into boiling water. Once done, turn off the heat and leave them with the lid closed for 2-3-4 minutes maximum. Then, you have to drain and season them in various ways. At this time, my favorite is the classic Ligurian basil-based pesto. You can see an example in the photos below, with a pesto made from a large-grain mince.
This dish is very old, and just a few days ago I read the news of a luminary in this field who works in Pontremoli. Visually, the Testaroli prepared in this way really seem a completely different story compared to those we eat at home and that you can see in the images.
For those who have the opportunity to try them, a warning: their consistency is very particular, especially if you use packaged Testaroli. The advice is not to attempt the binge and then remain on an empty stomach.

Oggi voglio proporre un'antichissima ricetta tipica delle zone vicine, la ben conosciuta Lunigiana. Sto parlando di un particolare piatto servito come prima portata, il Testarolo.
Il Testarolo è un alimento a base di farina di grano preparato in maniera peculiare. Vengono utilizzate speciali padelle di ghisa riscaldate sul fuoco ardente. All'interno di queste padelle, viene versata una pastella – un impasto a base di acqua e farina – abbastanza liquida. Il forte calore determina l'evaporazione dell'acqua dell'impasto, motivo per cui si formano tutti quei piccoli fori che vedete nelle foto di seguito.
Riproporre il Testarolo così come descritto è piuttosto difficoltoso nella vita di tutti i giorni. Questo è il motivo per cui ricorriamo più spesso a prodotti già pronti, magari sotto-vuoto o confezionati da freschi e arrivati direttamente dalla Lunigiana. Un testarolo intero è una distesa di pasta a forma circolare, dello spessore di circa 3-4 mm e del diametro che dipende dalla padella in cui è stato cotto: di solito, tra 35 - 45 cm. Una volta aperto viene tagliato in pezzi rettangolari (la maggior parte delle volte, io li taglio in piccoli rombi).
Accatastati uno sopra l'altro, attendono di essere gettati in acqua bollente. Una volta fatto, dobbiamo spegnere il fuoco e lasciarli a coperchio chiuso per 2-3-4 minuti (al massimo). Dobbiamo poi scolarli e condirli nei modi che preferiamo. Ad oggi, io prediligo il classico pesto ligure a base di basilico. Ne vedete un esempio nelle foto di seguito, dove vedete un pesto fatto da un trito a grana grossa.
Questo piatto è molto antico, e proprio pochi giorni fa ho letto la notizia di un luminare in questo campo che opera a Pontremoli. Alla vista, i testaroli da lui preparati sembrano veramente tutta un'altra storia rispetto a quelli che prepariamo a casa, già confezionati.
Per chi avesse la possibilità di provarli, un avvertimento: la loro consistenza è molto particolare, specialmente se utilizzate testaroli confezionati. Il consiglio è quello di non tentare l'abbuffata per poi rimanere a pancia vuota.
