Uno de los platos tradicionales e las Festiviades Navideñas en mi bello país Venezuela, es la "Ensalada de Gallina", por supuesto en el libro de recetas de mi madre no podía faltar.
One of the traditional dishes at the Christmas Festivals in my beautiful country Venezuela, is the "Ensalada de Gallina", of course in my mother's recipe book.

Ingredientes //Ingredients

1 Chicken Breast

1/2 Kg of potatoes
3 medium sized carrots
1 small onion
1/2 red paprika
Parsley, oregano and garlic
Mayonnaise, Mustard and Sugar
Salt

1 Pechuga de Gallina

1/2 Kg de papa
3 Zanahorias medianas
1 Cebolla pequeña
1/2 Pimentón rojo
Perejil, oregano y ajo
Mayonesa, Mostaza y azucar
Sal

Preparación // Preparation

Se coloca a sancochar la pechuga de gallina, con sal al gusto, hasta que este totalmente blanda para desmecharla. Seguidamente se coloca a sancochar las papas previamente peladas y cortadas en cuadritos muy pequeños. Se hace el mismo procedimiento con la zanahoria, se pela y se corta en trozos pequeños y se coloca a sancochar.
Boil the chicken breast with salt to taste until it is soft enough to remove. Next, parboil the potatoes, previously peeled and cut into very small squares. The same procedure is done with the carrot, it is peeled and cut in small pieces and then placed to parboil.

Una vez cocinada la pechuga de gallina se saca y se deja enfriar para luego desmecharla.

Las papas y la zanahoria una vez cocinadas se sacan y se dejan enfriar también.

Luego se corta el pimenton y la cebolla finamente y en cuadros muy pequeños y se seapara un poco del concentrado donde se cocinó la pechuga de gallina para usarlo para su preparación.

Once the chicken breast is cooked, it is taken out and left to cool and then it is shredded.

The potatoes and carrots are then taken out and left to cool as well.
Then cut the pepper and onion finely and in very small squares and remove some of the concentrate where the chicken breast was cooked to use it for its preparation.

Se coloca a sofreir la cebolla y el pimenton en un poco de aceite y luego se agrega la gallina desmenuzada.

Se sofrie todo se agrega el perejil, oregano y el ajo, asi como sal al gusto.
Se agrega un poco del concentrado de la gallina.
Luego se retira el fuego y una vez que enfrie se agrega a la papa y zanahoria cocidas.

Fry the onion and pepper in a little oil and then add the shredded chicken.

Fry everything and add parsley, oregano and garlic, as well as salt to taste.
Add a little bit of the hen's concentrate.
Then remove the fire and once it cools down add the cooked potato and carrot.

Seguidamente se procede a preparar la mezcla de la mayonesa con la mostaza y azucar para untarla a la papa y zanahoria , asi como la gallina una vez que se enfrien.
Then we proceed to prepare the mixture of mayonnaise with mustard and sugar to spread on the potatoes and carrots, as well as the chicken once they have cooled down.
