How to Make Aceh Sour Shrimp Sauce

Well, today I will share a recipe that comes from Aceh, this sambal is a sauce that is very familiar to people in Aceh. Another name for this chili sauce is marijuana sauce, why is it called marijuana chili sauce? It is said that when you eat this chili sauce? You will not stop to eat it and make you addicted to eating this marijuana sauce. A very unique name and quite easy too to make. Curious about how to make this shrimp tamarind or marijuana sauce? Well, to make this Acehnese special sour shrimp sauce, all you have to prepare is shrimp with a small size to taste, star fruit vegetables, some fruits, cayenne pepper which is quite spicy, onion, lemongrass, lime leaves and the last one is salt. Well, that's all you have to prepare. Now let's start with the first stage.

The first stage, all you have to do is clean the shrimp that you have prepared until they are completely clean, then prepare a frying pan and pour enough cooking oil. After that fry it until cooked and brownish like the photo above.

The second stage, after you finish frying everything you have prepared, now prepare the other spices as well. You must first chop the vegetable starfruit, onion, cayenne pepper, lemongrass and lastly, lime leaves. After you have cut into small pieces the spices I mentioned above, now let's go to the next stage.

The third stage, after all the spices have been cut and the shrimp have been fried, then prepare a traditional pounder like the photo above. Because we will make traditional food, so all the tools we use with traditional tools too. Because in the past, there was no blender and still use a manual pounder. Now put all the chilies, cayenne pepper and shallots, then mash them using a special stone for food mashers. Pound until the spices become semi-fine.

The fourth stage, after all the cayenne pepper and shallots have been mashed into half smooth, now add the starfruit and lemongrass into the food pounder, pound again until half smooth. This traditional food requires a little energy to pound the food, because from the beginning to the end, everything is the same, namely pounding.

The fifth stage, after the starfruit and lemongrass have been mashed until half smooth, now add another 1 teaspoon of salt and also lime leaves that have been cut into small pieces. After that, mash again until the salt and lime leaves are mixed with other spices. You can taste first, if you think it's not salty enough, you can add more salt as you wish.

The sixth stage, after you think the salt is enough and the lime leaves have been mixed with the other spices, now add all the shrimp and mash the spices again until they are really smooth. At this stage it requires a little more energy, because pounding shrimp is very difficult and requires more energy.

Now, for this last stage, so that the taste of the shrimp tamarind sauce is more delicious and delicious, add half a lime and squeeze until it runs out. Then mash and stir again until the chili is evenly mixed. After that, you can enjoy the cannabis sauce or shrimp tamarind sauce.
