How to Make Durian Compote with Sticky Rice

Yooo hello my fellow hivers and the entire hive community from all over the world. Back again with me Jodi Pamungkas on the snack and food recipe blog. Thank you for those of you who have read and supported my previous post regarding the Bakwan Corn snack recipe with shrimp. Well, it just so happened that in my area it was durian season and I immediately thought what snacks would match the main ingredient of durian. Ema gave advice to make durian compote with sticky rice, I agreed with Ema's suggestion and I immediately went shopping for all the needs to make durian compote. Do you like durian? Not a few people who like durian because of the unpleasant aroma and make many people nauseous. Me and ema really like durian and it is our favorite fruit, want to know how to make durian compote? Just take a look at the durian compote recipe below.

The first thing you have to prepare is durian, you can use any type of durian, I suggest choosing a durian that is not too sweet to make durian compote, then glutinous rice, coconut milk, pandan leaves, cornstarch, sugar and salt. I bought durian at a fairly cheap price and the quality of the durian is very good. Now we will go to the first process.

What you have to do first is, pour all the coconut milk into the glutinous rice according to the amount of glutinous rice you want to make, this process is almost similar to cooking rice, use pandan leaves so that the aroma of coconut milk and glutinous rice is stronger. Use a rice cooker to cook sticky rice. This process will take some time and leave the rice cooker until the glutinous rice is completely cooked.

The next thing you have to do is squeeze all the durians that you prepare to use, making sure your hands have been washed clean. I give you 2 options that you can choose, first you can squeeze all the durian, second you can take all the durian flesh and remove the durian seeds. I took the first option, which is to squeeze all the durians so that the flesh is slightly separated from the durian seeds. Don't forget to wash your hands first and squeeze gently.

Well, now we enter the main process of making durian compote, after you have squeezed all the durians or peeled all the durian flesh, add some spices such as 1 tablespoon cornstarch, 2 tablespoons sugar and half a tablespoon salt. Make sure you use a clean pan and everything must be sterile, guys.

Now, add coconut milk according to the amount of compote sauce you want to make, then stir evenly and leave the mixture for about 10 to 20 minutes so that all the durians become perfect into compote. Don't forget to stir after you leave it for 10 minutes and use medium heat to cook the durian compote sauce.

Well, after a few minutes you leave the durian compote in a live fire state, turn off the fire and move it to another place. Now you can enjoy durian compote. But it's not over yet, we have to eat durian compote using sticky rice that has been cooked in the rice cooker.
