Baked veggies are one of my favourites. It’s a complete meal. It’s healthy, it’s tasty and aesthetically looks good on the dinner table. For me it ticks all the check boxes.

Whenever I have guests coming over, I make sure I make baked veggies. My friends and family enjoy my baked veggies preparation. Today I thought will share with you my recipe.

Ingredients

Potato - 2 Medium Sized
Carrot - 2 Medium Sized
Fresh Corn - ¾ Cup
White Flour - 2 tbsp
Butter - 2 tbsp
Oil for frying
Milk - 1 ½ cup
Cheese - 3 tbsp (grated)
Black Pepper - ½ tsp
Salt - ½ tsp (to taste)

The Recipe

White Sauce

Heat butter in a fry pan, add flour and cook on a low flame by stirring well till light golden brown.
Add grated cheese and cook for one minute, then add milk gradually, black pepper and salt.
Cook for about 5 minutes till its thick and viscous.

Baked Veggies

Peel and Cut potatoes and carrots in to round slices.
Keep potatoes in salted water to prevent these becoming black.
Boil carrot till it becomes soft. Set Aside.
Fry potatoes in oil till light golden brown. Set Aside.
Boil corn for two to three minutes. Set Aside.
Take a shallow baking dish. Spread a layer of cooked white sauce in the baking dish.
Spread a layer of potatoes, again spread another layer of white sauce.
Now spread a layer of carrots and fresh corns. Add another layer of white sauce and then a layer of remaining potatoes, carrots and corn for decoration.
Spread a layer of grated cheese on top.
Bake for 15 minutes in pre heated oven at a temperature of 200 degree centigrade.
Serve hot.
