How To Make Chicken Tapas

There are two ways to make tapas in the Philippines, one is cured with spices and then dried or smoked. But nowadays, Tapa’s made easier by simply marinating the meat with spices for at least 10-12 hours. We are going to make the marination process for easier and convenient method.

Filipino Tapas are thinly sliced meat, varied meat can be used in making tapas such as beef, chicken, pork and sometimes horse and carabao meat.

For Today’s dish, we are going to use chicken meat in making tapas.

Ingredients

Chicken breast, 500g
Garlic, crushed
Soy sauce, ¼ cup
Lemon, 1 tbsp
Brown sugar, 2 tbsp
Salt and pepper
Dried thyme, 1 tsp, optional
Dried Rosemary, 1 tsp, optional

Procedure

  • Sliced the chicken thinly and placed them in a deep bowl.

  • Add all the rest of the ingredients and combine well. Cover and let it Marinate for 12 hours.

  • Fry or grilled to serve.

We usually served tapa’s with rice and a sunny side up egg for a Filipino traditional breakfast.

Marinate the meat not more than 12 hours, Over marinating it, will result in a saltier tapas. Under marinating will be okay, But not as tasty as the full marination. You can put the meat in a freezer after 12 hours of marination.
