I, first, learned of turmeric around a few years ago.
It was my second time to have Lyme disease (after being bitten by a deer tic in Maryland) and following a month-long course of antibiotics, I was desperate to get better.
The reason turmeric root interested me (besides it’s great taste) was because it helped with inflammation —- one of the serious side effects of Lyme disease.
Left untreated, Lyme can lead to paralysis or meningitis, so I wanted to do everything in my power to regain my strength and energy—-this diet also included lots of garlic to boost my immune system as well as ginger, leafy greens, smoothie, you name it...
But, over the years since I got better, I forgot about tumeric —- until I was preparing lunch the other day.
Cubing the chicken and onions to sauté, I wished I had a sauce to add more flavor to the dish. Then, I remembered I had ground turmeric and applied it, liberally, as I was preparing my meal.
15 minutes later, I had this delicious & healthy meal —- which you can serve over rice:
