From Olive fruits to extra virgin olive oil

This is the reason why I haven't published anything for a long time, because I am in the action of gathering Olive fruits from morning to night , to preserve the tradition of producing Olive Extra Virgin Oil

this is obtained by placing a net under the tree and shaking it with a shaker over the branches to separate the fruit from the branch and burn it to the floor actually on the net.

This tree is beautiful and at least 300 years old , and still gives beautiful fruits with this year being a severe drought and few fruits but they are sweet

this is what fruits are harvested, which fall into the net and are then collected and stored for transport

this is what a set of red basket filled with olives and a fruit shaking machine looks like.

and when processed in this way it is poured into containers.

We call it EVOO for short. It's the best liquid ever!

A liquid that is perfect for us and it is interesting to make it always with some action with pleasure ;))

I'm really not looking forwarded to harvesting my Olives, I might have to get people in to do it for me.
