Top Notch Weekend Lunch For A Good Mood

Hello Foodies!

We cannot go out these days due to the Covid lockdown in India. We usually used to go to some good restaurants over the weekend to have good food. But if we aren't going out that doesn't mean we don't get good food to eat. Home-cooked food is the best, considering the health perspective too.

So today I prepared Amritasari Chur-Chur naan at home. These are extremely famous in Amritsar (the city of Golden Temple). Crispy bread with spicy potato stuffing; that tandoori aroma with tangy tamarind onions, yummmm!!

Let me give you a glimpse. More than the recipe, it's the trick that works here.

Potato Mix Preperation

Thi requires a proper mix of chopped onion. green chilli, coriander and ginger added to grated potatoes with lot of indian spices including red chilli powder, coriander powder, cumin powder, dry mango powder, anardana and salt.

Kneading the flour

The bread is made using refined flour kneaded with curd, vegetable oil and a pinch of salt which is then allowed to ferment for at least 1 hour.

Preparing the bread

Chur-Chur naan requires a special pleating technique of the flour to give it that crisp yet soft texture. The potato mix is stuffed into the pleated ball of flour and spread into a circular shape. The bread is first cooked on a non-stick pan on low flame and then directly on the gas to give it a tandoori flavour.
