I have a secret in banana bread, and I am going to tell you :) - do not overmix the batter to avoid developing gluten; just mix to combine, and your bread will be soft, not dense. Adding oil makes it moist instead of just butter.
As for “scraping up any browned bits”—that means using a spoon to loosen the little flavourful bits of meat or onions that get stuck to the bottom and sides of the pan while cooking. These bits (called fond) are packed with flavour, making the sauce richer and more delicious. Thank you 😊💗
