Kombucha isn't a tonic I suppose(depends on the definition of tonic). But generally, when people say Kombucha, It's fermented tea made with a SCOBY ( symbiotic culture of bacteria and yeast ). The name itself could be the the misapplication of Japanese words: kombucha, kobucha (which translate to "tea made from kelp"), kobu, konbu (which mean "kelp") and cha (meaning "tea").
